Allergy-Friendly Chia (or Flax) Seed Not-Oatmeal

"...what nicer thing can you do for somebody than make them breakfast?..."
–Anthony Bourdain

While I love oatmeal for breakfast it doesn't love me. With my perfect storm of dietary challenges, from celiac disease to food allergies, including alpha-gal, I find it's easier to avoid it altogether. But how I miss it! I created this easy recipe for Chia (or Flax) Seed Not-Oatmeal to fill the void. While this Not-Oatmeal has become a go-to breakfast for me, made fresh or overnight-oats style, it can also do triple duty as a dessert or pick-me-up snack (think 'pudding'). It's easy to dress-up to tempt even the most fickle tastebuds at your table. Plus Chia and Flax Seeds are superfoods that will show your body the love. Make this…
Allergy-Friendly Chia (or Flax) Seed Not-Oatmeal
(makes 4 servings)
Ingredients
1 cup of your favorite dairy-free milk
¼ cup Chia or Flax Seeds, whole or ground (*See tips)
2 tablespoons of maple syrup, agave, or honey (*See tips)
1 teaspoon of vanilla extract
Let’s Get Started!
Combine all ingredients in a bowl.
Mix well and allow the ingredients to set for 10 minutes.
Stir again once the seeds have started to gel.
Allow for setup for at least 1 hour or overnight. (*See tips!!!)
Stir before serving and add your favorite fruit or toppings to serve. (*See tips)
*Tips

Does triple duty: perfect as a breakfast of champions when oatmeal's a no-go, or as a snack or dessert 'pudding'. Definitely an anytime treat.
Experiment with texture: For a creamier result use ground Chia Seeds.
Experiment with temperature: Delicious served cold or warm. To warm it you can microwave it for approx. 1 minute and add a dash of allergy-friendly milk or water to thin it out to taste. Keeps 3 to 5 days in the refrigerator.
This is a key step: It's important to allow Chia and Flax Seeds enough time to absorb liquid to aid digestion when you eat them. Plus, the time in the liquid helps create the creamy ('pudding') oat texture.
Play with the flavor profile:
You can make the Not-Oatmeal/pudding more sweet or less sweet by adjusting the amount of sweetener added.
Add 1 tablespoon of cocoa powder if you're in a chocolatey mood.
Or, flavor it with your favorite spices. Cinnamon, nutmeg, ginger, or cardamom or some combination of them make it taste like fall.
Consider tasty add-ins like chocolate chips, coconut, raisins, toasted pumpkin or sunflower seeds, fresh fruit (think berries or bananas), even a dollop of jam.
Bon appetit!
